Loro Park
World famous and worth a day trip, but it's in Puerto de la Cruz (up North), so you'll have to get up early. You can also book online.

Jungle (Eagle) Park
Very nicely done and just outside Los Cristianos. Highlights include the free flying raptor show, parrot show and close up big cats. The jungle raid is fun for the kids and the Bob is a real rush (although expensive). Unfortunately it appears the contact zones have gone (January 2008). Booking online is a bit cheaper.

Siam Park
At the back of Playa de las Americas this is a large new water park. Now Open.

Aqualand
Also at the back of Playa de las Americas this is a better than average water park, with various water slides, including for small kids. (1.20 - 1.40 M is the minimum height for the big slides.) A real plus for the Aquapark is the great included dolphin show. One tip though...Don't forget the cream. It's a real suntrap.

Whale Watching
Very popular and available from most southern Tenerife ports. You'll be taken out into the channel between Tenerife and Gomera, and they guarantee you'll see a whale. There will be a bit of entertainment and often an opportunity to swim. Take your sea legs. It's not always as calm as it looks.

Los Cristianos Market
Every Sunday from 09:00 to 14:00, just off the promenade. You'll need plenty of time and patience.It is big, hot and busy, but there is plenty of good stuff to be had. Lots of leather, shoes, clothes, electronics, watches, trinkets etc. at reasonable prices. Have a haggle, it's worth it.

Mount Teide
Definitely worth a trip but here a bit of advise.... The air is thin so exertion is not advisable. In Spring and Autumn it can be chilly. In winter it snows. The cable car from the main crater to the highest peak is often very busy and the queue long. Take a packed lunch, there are almost no catering facilities in the national park.
